Coffee Infused Chocolate Ganache Tower

Ingredients:

The Dark Chocolate Half:

 Ingredients:
3 ounces Semi-Sweet Chocolate
1/4 cup Heavy Cream
1/4 cup Sabroso (or other coffee-flavor liqueur)
1 Egg Yolk
1/4 oz Sugar
1 tbsp Honey

Melt the chocolate on a bain marie aka double boiler.

Whip the cream to soft peaks and refrigerate for about 10 minutes.
