Louisiana Red Beans and Rice
My friend Sande made this dish one night when she had us over for dinner. I was addicted (it's the Tobasco!). She had clipped the recipe from a paper many years ago and gave me a copy.
Ingredients
4 cans kidney beans, drained
1/2 lb andouille sausage cooked and diced
2 tbsp oil
1 tbsp garlic, minced
2 cups onions, minced
1 cup green pepper, minced
1 cup celery, minced
1/4 cup parsley, minced
1/2 tsp cayenne pepper
1 bay leaf
1/2 tsp dried thyme
1 tsp Tabasco sauce
1 tbsp sugar
salt
pepper
1 can diced tomatoes
1/2 lb polish sausage, cooked and diced
1 cup scallions, minced
4 cups rice (measured before steaming)
