Sausage and Warm Potato Salad Supper

Ingredients:
This is one of my girlfriend's favorite fall recipes and she requests it all the time. It's a great dinner for several reasons:
1) Perfect for hectic weeknights; the whole thing takes less than 30 minutes to prepare and it's all done in one pan for super-fast cleanup.
2) Hearty comfort food that warms you up on a cold night.
3) It involves copious quantities of beer.
-1 LB cooked sausage (Kielbasa and Hot Smoked Sauasge both work great)
- 4 slices bacon, chopped
- 2 cloves garlic, minced
- 1 med. white or red onion, chopped medium-fine
- 2 1/2 C (1 package) diced potatoes with onion
- Dijon Mustard
- Cider Vinegar
- Beer (pretty much anything you enjoy drinking should be fine but very dark beers can be a bit too bitter)
Preheat your oven to 200F.
Step 1:
If you have 2 huge sausages, cut them in half; you want four ~1/2 LB sausages. Using a bamboo skewer or toothpick, pierce the sausages all over. Don't go all the way through if you can help it, but don't bother being too meticulous either, you just need to create a path for the beer to get into the sausage and some of the pork fat to get out.
