Quinoa, Pine nuts and Sausage Stuffed Pumpkin

 Ingredients:

- 1 cup quinoa
- 2 sausages, such as pork-sage or chicken-apple, decased
- 2 cloves garlic
- 1 cup sweet onion, diced
- 1/2 cup apple, diced
- 1/4 cup Pine nuts
- 2 small sugar pumpkins

1) Hollow out pumpkin 
  
 
 Step 1:

In a 350 degree oven, cook face down for 1 hour.

Prepare 1 cup of quinoa.

Saute onion and garlic, add sausage and apple and brown.

Mix quinoa, sausage mixture and pine nuts.
  
 
 Step 2:

Fill pumpkins. Brown lightly in a low oven (200 degrees Fahrenheit).

Serve your Sausage Stuffed Pumpkin
